Eid Paradise Bars
Ingredients:
2 cups shredded fresh coconut (unsweetened)
½ cup chopped pistachios
½ cup sliced almonds
1 can (13.5 fl oz) full-fat coconut milk (organic preferred)
¾ cup Danish condensed milk (adjust for desired sweetness)
Butter (for greasing the pan)
Toasted shredded coconut (optional, for garnish)

Method:
- Toast the coconut, pistachios, and almonds in a pan with butter until golden brown. Set aside.
- In a separate saucepan, simmer the full-fat coconut milk over medium heat for 15-20 minutes, stirring occasionally, until thickened. Let cool slightly.
- Combine the toasted coconut mixture, thickened coconut milk, and condensed milk in a large bowl. Mix well until sticky and well combined.
- Line a baking tray or loaf pan with parchment paper. Pour the mixture into the pan and spread evenly. Press down gently to remove air bubbles.
- Refrigerate for at least 2 hours, or until completely set and firm.
Garnishing:
Sprinkle the top of the chilled bars with additional toasted shredded coconut for a decorative touch.
Serve:
Cut the chilled Eid Paradise bars into desired sizes (squares, rectangles, or diamonds) and serve cold. Enjoy this delicious and festive Eid treat!
